Uesegi get very cheap monk units which are actually the "elite" tier of units, while Otomo (besides being christian) get access to guns way before everyone else. The races differ in starting position and some faction stat which will heavily discount/buff a unit type or technology path. You'll always have ashigaru+samurai+monk versions of bows and spears, along with samurai with swords or naginatas. Keep in mind that everyone plays the same in combat. You really want a "corner" of the map you can easily defend and expand from since the other factions will quickly blob up and ally against you (in lategame you will have to fight literally everyone else in the game).
